The part of the steel is instead destined for the production of white and rosé with controlled temperature to avoid oxidation. Following fermentation, both Pinot Nero and Chardonnay are aged in medium toasted French oak barrels. For reds the rest period in barriques is about 12 months, while for white it is about 3 months. After aging in wood, all our wines rest in concrete for about 6 months, a practice that allows the wine to clarify naturally, thus avoiding filtration. Once bottled, our reds rest for 6 to 24 months before being able to go out on the market, a feature that allows a natural evolution in the bottle due to the fact that we use natural cork stoppers. 25000 bottles of still IGT wines, handpicked and with selection of the grape. from 2018 a conversion to organic is underway: therefore we will soon produce 100% organic wines made with techniques that are not harmful to man and the environment; we carry out a local and national distribution.
